Amarula Macadamia Banana Bread

This South African banana bread is a moist, rich loaf that combines the sweetness of ripe bananas with the smooth, creamy notes of Amarula liqueur, creating a decadent treat perfect for any occasion. Each slice is infused with hints of vanilla and a touch of warmth, while the macadamia nuts add a delightful crunch and nuttiness.

INGREDIANTS 

 

  • 3 ripe bananas (mashed)
  • 1/2 cup macadamia oil 
  • 1/2 cup (100g) brown sugar
  • 2 large eggs
  • 1/4 cup (60ml) Amarula cream liqueur
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups (190g) all-purpose flour or gluten free 
  • 1/2 cup chopped macadamia nuts nuts 
  •  

    INSTRUCTIONS:

    1. Preheat the Oven: Preheat your oven to (175°C). 

    2. Mix Wet Ingredients: In a large bowl, combine the mashed bananas and macadamia oil. Mix in the brown sugar and granulated sugar. Add the eggs, Amarula, and vanilla extract, and mix until well combined.

    3. Combine Dry Ingredients: In another bowl, whisk together the baking soda, baking powder, salt, and flour.

    4. Combine Mixtures: Gradually add the dry ingredients to the banana mixture. Stir until just combined; be careful not to overmix. If desired, fold in the macadamia nuts 

    5. Pour into Pan: Pour the batter into the prepared loaf tin, smoothing the top.

    6. Bake: Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

    7. Cool: Allow the banana bread to cool in the tin for about 10 minutes before transferring it to a wire rack to cool completely.

    8. Enjoy: Slice and enjoy your delicious Amarula banana bread! Perfect for tea time, a snack, or dessert.
