This macadamia malva pudding is a delightful twist on the traditional recipe, combining rich flavors with a nutty crunch that’s sure to impress!
Ingredients:
For the Pudding:
- 1 cup (150g) all-purpose flour or gluten-free flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sugar
- 2 large eggs
- 1/3 tablespoon apricot jam
- 1/2 cup milk
- 1/2 cup macadamia oil
- 1 teaspoon vanilla extract
- 1/2 cup (75g) chopped macadamia nuts
For the Sauce:
- 1/2 cup (120ml) milk
- 1/3 cup (100g) sugar
- 1/3 cup (120ml) butter
- 1/3 cup (120ml) fresh or canned apricot juice
- 1 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to (175°C). Grease a medium baking dish.

Mix Dry Ingredients: In a bowl, whisk together the flour, baking soda, and salt.

Combine Wet Ingredients: In a separate bowl, beat the sugar and egg until pale and fluffy. Mix in the apricot jam, milk, macadamia oil, and vanilla extract.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chopped macadamia nuts.

Bake: Pour the batter into the prepared baking dish. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Prepare the Sauce: While the pudding is baking, combine the milk, sugar, and butter in a saucepan over medium heat. Stir until the butter is melted and the sugar is dissolved. Remove from heat and stir in the apricot juice and vanilla extract.

Soak the Pudding: Once the pudding is done baking, remove it from the oven and immediately pour half of the warm sauce over the top, allowing it to soak in.

Serve: Let the pudding sit for a few minutes, then serve warm with the remaining sauce drizzled over each portion. Optional: serve with custard
