Macadamia Nut Crusted Bobotie

A deliciously flavourful bobotie with a unique crunchy and rich crust.

INGREDIANTS 

For the Bobotie:

  • 500g minced lamb or beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp curry powder
  • 1 tsp turmeric
  • 1 tsp dried thyme
  • 2 slices of white bread
  • 1 cup milk (or dairy-free alternative)
  • 1 large eggs
  • 2 tbsp fruit chutney (like Mrs. Ball's)
  • 2 tbsp lemon juice
  • Salt and pepper to taste

For the Macadamia Nut Crust:

  • 1 cup macadamia nuts, finely chopped
  • 1/2 cup Blinkwater Moon Oil
  • 1 tsp dried herbs (like thyme or oregano
  • 1egg 

DIRECTIONS:

  • Preheat Oven: Preheat your oven to 180°C.
  • Prepare the Mince: In a large skillet, heat a little oil over medium heat. Sauté the onions until soft, then add the garlic and ginger.
  • Stir in the curry powder, turmeric, and thyme, cooking for another minute.
  • Add the minced meat and cook until browned. Season with salt and pepper.
  • Mix the Bread and Milk: In a bowl, soak the bread in milk for a few minutes. Once soaked, squeeze out the excess milk and crumble the bread into the meat mixture.
  • Combine Ingredients: Stir in the fruit chutney, lemon juice, and one beaten egg into the meat mixture. Mix well until everything is combined.
  • Transfer to Baking Dish: Pour the mixture into a greased baking dish, spreading it evenly.
  • Prepare the Nut Crust: In a bowl, mix the chopped macadamia nuts with Blinkwater Moon Oil and dried herbs and beaten egg.
  • Top with Nut Crust: Spread the macadamia nut mixture evenly over the top of the bobotie.
  • Bake: Bake in the preheated oven for about 30-35 minutes, or until the top is golden and the filling is set.
  • Serve: Allow to cool for a few minutes before serving. Enjoy your Macadamia Nut Crusted Bobotie with yellow rice and a side of chutney!

 TIPS:

  • Feel free to adjust the spice levels according to your taste.
  • You can add dried fruit like raisins or apricots to the meat mixture for extra sweetness.
